Daniel is right. Every instance is at least a little different, and some are a lot different. Internal documentation and experienced people are the best resources.
Google, but look for power points and pdfs. Some of the best material I found was from school districts and universities! I assume because they keep their processes more public.

I would be interested in seeing more responses to this question but I think it needs to be more specific to which system you are using in SAP. In our plant Maintenance and Reliability use PRD, SRM, GFP. the company that did the install and set-up 15 years ago left behind some training manuals. I found them very helpful but somethings are outdated. Luckily I moved around the company enough to find some of these old manuals kept by pack rats like myself. Most of the manuals have been thrown away. I do use google a lot but like Daniel said ours has been customized a lot so an off the shelf text may not be worth it.
